How To Make Stuffed Baked Apples
- Wash and dry your apples. (Hint: The larger your apples the more filling you can fit)
- Use a melon baller or small knife and spoon to core the apple and create a well in the centre.
- Using a fork or large spoon. Mix together stuffing ingredients in a small bowl. This will be easier if your vegan butter is soft.
- Stuff apples and place in baking dish, loaf pan or muffin tin if they will fit.

Stuffed Baked Apples
Classic Stuffed Baked Apples stuffed with buttery brown sugar, whole grain oats, pecans and dried currant. It is vegan friendly and can be gluten and refined sugar free.

Ingredients
- 4 medium firm, sweet apples, like Honeycrisp, Fuji or Golden Delicious
- 1/4 cup brown sugar (can sub for coconut sugar)
- 1/4 cup old-fashioned whole grain oats (if gluten-free sub for certified gluten-free)
- 1 tsp ground cinnamon
- 1/4 cup chopped pecan or walnuts
- 1/4 cup currants or chopped raisins or cranberries
- 4 tbsp vegan butter or coconut oil, softened
Instructions
- Preheat your oven to 375 F (190 C).
- Wash and dry your apples
- Using a melon baller, apple corer or a sharp pairing knife and spoon, cut out a well in the centre of the apple. Ensure you remove the entire core leaving the bottom 1/2 inch of the apples intact.
- Mix the ingredients for the stuffing in a small bowl until the vegan butter or coconut oil is spread throughout.
- Place the apples in a baking dish and stuff each apple with filling mixture.
- Bake for 30-45 minutes. Baking time will vary depending on the size and firmness or your apples.
- Serve warm with vegan ice cream or coconut whipped cream.
Notes
Store in an airtight container refrigerated for up to 4 days. Not freezer friendly.
