How To Make Vegan Chow Mein

Isn’t Vegetable Chow Mein Vegan?

Chow mien was always a must for me when I ordered from a Chinese restaurant. I love the combination of saucy noodles and crunchy colorful vegetables. However, traditional vegetable chow mien isn’t vegan because it contains oyster sauce.  I rarely find a restaurant that has a vegan version, so I make my own at home!

Vegetable Choices


The vegetables I used for this dish are what I had in the fridge at the time.  Feel free to use whatever vegetables you love.  Some suggestions are:

broccoli, mushrooms, snow peas, peppers, onion, water chestnuts, bok choy, cabbage, edamame, bean sprouts, cashews or peanuts.

If you want to add extra protein, add tofu, tempeh, seitan or beans.

How Do You Cut Your Carrots?

The most difficult part of this recipe is the cutting of the vegetables.  Typically I julienne my carrots because I love the way it looks but if you don’t know how or don’t have the time, simply slice them into rounds or grate them like I did.  They will taste just as good any way you slice them.  If you want to learn how to julienne, click here. 

Tips and Tricks For This Recipe

For Ginger:

Make cutting ginger super quick and easy, store your ginger in the freezer.  When it’s time to use, grate if frozen skin and all!

For Cooking:

When cooking your vegetables use a wok if you have one or a non-stick skillet will work just as well. 

Noodles:

When choosing noodles, look for ones that are egg-free.  Be careful they are usually on the shelf right beside each other.

Don’t Forget The Spice!

I love spicy food, but I didn’t include any chilis in this recipe because Carrington always eats the same dinner we do. We always add some siracha or red chili flakes afterwards to our own taste.  Feel free to do the same.

Make This Chow Mein Gluten-Free

If you want this dish to be entirely gluten-free, I would suggest using rice noodles and tamari in place of soya sauce.

Ingredients

Scale
  • 400gs or 2 servings worth of vegan chow mien or brown rice ramen noodles
  • 2 tbsp vegetable oil

  • ½ cup onion, diced 

  • 1 small or 1/2 large zucchini, halved and sliced

  • 1 large carrot, julienned or grated

  • ½ cup corn kernels

  • 12 green beans, trimmed and chopped

  • 1 small red pepper, deseeded and diced

  • 2 tbsp green onion or chives, finely sliced

  • Fresh cilantro and black or white sesame seeds to garnish

For the sauce:

  • ½ cup vegetable stock

  • 1 tsp sesame oil

  • 2 tbsp mirin

  • 1/3 cup soya sauce or tamari for gluten-free

  • 2 tbsp maple syrup

  • 1 tbsp fresh lime juice

  • 2 cloves garlic, finely chopped

  • 2 tbsp grated ginger

Instructions

  1. Combine the ingredients for the sauce. Mix well.  Taste and adjust seasoning if necessary

  2. Heat oil in a wok or skillet on medium/high heat.  Add all the vegetables and stir-fry for 2-3 minutes. Toss well so they cook evenly.

  3. Add the sauce and noodles to the pan. Stir until everything is incorporated.

  4. Top with green onion and sesame seeds and cilantro.
