Vegan Chocolate Pie

Rich and velvety this vegan chocolate pie tastes sinful. The filling is so decadent and silky you would never guess is dairy free with no refined sugar. It only has 4 ingredients- the main one being tofu! I use a store-bought vegan crust to make this pie quick and easy.

  • 1 vegan pie crust
  • 1 package of Enjoy Life mini chips or 1 ½ cups of vegan chocolate chips
  • 1 340g package of silken tofu
  • ½ cup of coconut sugar
  • Coconut whipped cream

Instructions

  1. Prepare pie according to directions.
  2. Melt the chocolate over a double boiler or in the microwave for 30-second intervals.
  3. Let cool for 30 seconds. Add to a blender (I use a Vitamix) along with silken tofu, and coconut sugar. Blend until very smooth
  4. Pour the filling into the crust.
  5. Place in the refrigerator to chill for at least 2 hours. The pie will firm as it cools.
  6. Once the filling is cooled, top with coconut whipped cream and chocolate shavings (if desired).
