6 cups of celery root also known as celeriac (about 3 medium-sized), peeled and cut into 1-inch chunks.
2 tbsp olive oil plus more for garnish
1 small white onion coarsely chopped
2 cloves of garlic, finely diced
2 tart apples (such as granny smith), peeled and cut into 1-inch pieces
1 tsp of sea salt (plus more to taste)
4 cups of water or veggie stock.
Instructions
Heat oil in a saucepan, over medium heat. Add onion and garlic and sauté until translucent.
Add celery root, apple, sea salt and water or stock.
Bring to a boil then simmer on low for 20 mins or until celery root is fork-tender.
Using a handheld blender, blend until smooth. Alternatively, you can pour the mixture into a Vitamix (use caution because it’s hot) and blend until smooth.
Spoon into a bowl and garnish with a swirl of olive oil, vegan crouton or sautéed apples.
