Star Sandwich with Pumpkin Seed Butter

Pumpkin seed butter is a perfect replacement for any kind of nut butter. It comes from seeds rather than nuts so it can be enjoyed by people suffering from nut allergies.

Ingredients

  • 2 cups of raw pumpkin seeds
  • 1 tbsp melted coconut oil
  • 1 tbsp hot water.
  • Optional additions: 2-3 tsp maple syrup, 1/2 tsp cinnamon, 1 tsp vanilla extract.

Instructions

  1. Process the raw pumpkin seeds, oil and hot water in a high power blender or food processor until you achieve a creamy consistency. Depending on the power of your blender it can take up to 15 minutes, make sure to scrape down the sides and give your blender or food processor a break if needed.
  2. Add all other ingredients and only pulse briefly.
  3. Enjoy! 

Notes

Pumpkin seed butter can be stored at room temperature for 2 weeks, or in the fridge for about 2 months
