Blueberry Steel Cut Oats topped with Granola and dried Strawberries

I’ve taken a few of my favourite breakfast options and turned them into one delicious Mixed Berry Oats that you can top with bananas, nuts and dried fruit.

Ingredients

  • 1 cup of steel cut oats
  • 3 cups of water

  • 1 cup of plant milk

  • ¼ tsp of salt

  • ½ tsp vanilla extract

  • 4 tbsp of maple syrup or sweetener of choice

  • 1/3 cup of fresh or frozen blueberries

  • ¼ cup of granola

  • 12 dried strawberry slices

Instructions

  1. Stir in the salt, cinnamon and blueberries. Continue to simmer the mixture, stirring occasionally and reducing the heat as necessary to prevent scorching the bottom, until almost all of the liquid is absorbed, about 10 minutes.

  2. Remove from heat and let the oatmeal rest for 5 minutes before serving so it can thicken and cool down slightly.

  3. Portion oatmeal into bowls and top with granola and dried strawberries.

Notes

Store leftover oatmeal in the fridge up to 4 days.
