Ingredients

  • 4 cups of dried tri-coloured bow tie pasta (organic, egg-free)
  • 1tsp sea salt
  • 1tbsp olive oil
  • ¼ cup of chopped red bell pepper
  • ¼ cup of chopped orange bell pepper
  • ¼ cup of chopped yellow bell pepper
  • ¼ cup of chopped red onion
  • ¼ cup of sliced black olives
  • 1/3 cup of pickled artichokes
  • 2 tbsp of capers
  • 1 tbsp freshly squeezed lemon juice
  • 1 tsp lemon zest (see tip)
  • 2 tbsp olive oil
  • 2 tbsp nutritional yeast
  • Dried chilis (optional)
  • Chopped parsley and lemon wedges to garnish
  • Salt and pepper to taste

Instructions

  1. In a large pot bring salted water to a heavy boil. Add 1 tbsp of olive and pasta. Cook
    as per package directions.
  2. Drain pasta and place into a large serving bowl.
  3. Add chopped peppers, onions, olives, artichokes, capers, lemon juice, zest, olive oil
    and nutritional yeast. Mix well
  4. Season to taste.
  5. Garnish with lemon wedges, parsley and dried chilis (optional).
