Vegan Cornbread

Ingredients

  • 1 1/3 cup flour
  • 1 cup corn meal
  • 2/3 cup sugar
  • 1 tbsp baking powder
  • 1 ½ tsp salt
  • 1 1/3 cup of non-dairy milk (I use almond)
  • 1/3 cup of canola oil

Instructions

  1. Preheat your oven to 400 degrees F and lightly grease a 9×9 baking pan
  2. In a large bowl, combine cornmeal, flour, sugar, salt and baking powder and stir.
  3. Add the non-dairy milk and oil.  Stir well until combined and no lumps remain.  
  4. Pour batter into greased pan.
  5. Bake for 20-25min or until golden brown. Insert a toothpick into the center.  If it comes out clean it’s done baking.
