Sit back with a batch of sweet, crispy, gold vegan caramel popcorn that is so addictive it should come with a warning label.

Ingredients

Scale
  • 12 cups of popped popcorn
  • ¼ cup of vegan butter

  • ½ cup of brown sugar

  • ¼ cup of maple syrup

  • 1/8 tsp of cream of tartar

  • ¼ tsp baking soda
  • ¼ tsp sea salt

Instructions

  1. In a medium sized saucepan mix together vegan butter, brown sugar, maple syrup and cream of tartar and salt. Place on burner on medium heat stirring consitantly being careful not to burn the sugar.  Once the mixture starts to foam cook for 1-2 minutes longer. Remove from heat and stir in baking soda. The caramel will start to bubble and foam.

  2. Pour the caramel over the popcorn stirring to coat as much as possible.  The caramel will become more evenly distributed as it cooks in the oven.

  3. Bake for 1 hour stirring every 15 minutes.  If using two trays rotate baking sheets halfway through cooking.

  4. Let it cool on the baking sheet.  Break apart any large pieces and store in an airtight container.
