How To Make Ketchup

Ingredients

  • 1 tbsp extra-virgin olive oil
  • 1 medium red onion, diced
  • 2 garlic cloves, chopped (about 1 tablespoon)
  • One 1-inch piece of ginger, peeled and chopped
  • 1/4 tsp ground allspice
  • 4 tbsp tomato paste
  • 1 796ml large can of diced tomatoes 
  • 1/4 to 1/3 cup packed brown sugar, depending on how sweet you like your ketchup
  • 1/4 cup apple cider vinegar
  • 1 tsp salt and fresh ground black pepper (or to taste)

Instructions

  1. In a large saucepan heat oil over medium heat then add the onion. Cook for 6-8 mins or until they are translucent, soft and lightly browned.
  2. Add salt and pepper, garlic, ginger, and allspice. Stir often being careful not to burn the spices.
  3. Add the tomato paste and cook for another 2 minutes, stirring often until it changes to a deep orange colour.
  4. Add the can of tomatoes, brown sugar, apple cider vinegar.
  5. Stir and bring to a simmer. 
  6. Reduce the heat slightly and cook at a low simmer for about 20mins, stirring occasionally.  The mixture should be thick and shiny when finished. 
  7. Taste and adjust the seasoning if necessary.
  8. Blend with a blender or a Vitamix until smooth.
  9. Let cool to room temperature then refrigerate in a sealed container for up to a month.
