Green Spinach & Vibrant Pea Pesto screams spring with it’s vibrant color and fresh taste. It is perfect when you are in the mood for something light and don’t want to spend much time in the kitchen cooking because this sauce only takes 20 mins to make.

Ingredients

  • 1 cup peas fresh or frozen
  • 3 cups raw spinach or 1 package of frozen
  • 1/3 cup raw cashews
  • 4 tbsp Nutritional yeast
  • 2 cloves of garlic
  • Juice of ½ a lemon or 3 tbsps of juice

Instructions

  1. Soak cashews overnight if you have a weak blender or in boiling water for 10mins if you have a high-speed blender.
  2. Place all ingredients listed into a blender and blend until smooth creamy scraping the sides if needed.
  3. Heat a skillet over medium heat. Pour mixture into a pan along with fresh peas or defrosted frozen peas.
  4. Heat for 3-4 minutes stirring occasionally.
  5. Season with salt and pepper to taste.
  6. Enjoy over your favourite pasta or use on top pizza or bruschetta.

Notes

This Green Spinach Vibrant Pea Pesto Sauce will keep in a sealed container for 4 days in the fridge or freeze for up to 3 months.
