These Creamy Coconut Marbled Popsicles are stunningly beautiful and summery sweet. Pretty swirling pastel colors these ice pops are creamy and decedent bursting with coconut flavor. With only 4 ingredients these Marbled Coconut Popsicles are easy, quick and essential for summer fun!
2 ½ cups full fat coconut milk
2–3 tbsp maple syrup(or to taste)
½ tsp blue butterfly pea powder
½ tsp pink papitya powder
1. Option to use a blender or bowl and handheld blender
Combine 1/3 of the coconut milk with blue butterfly pea powder and 1 tbsp maple syrup. Blend until thoroughly combined. Fill popsicle molds 1/3 of the way up. Freeze for 30mins without the popsicle sticks.
Blend 1/3 plain coconut milk with 1 tbsp maple syrup. Fill popsicle molds 1/3 way. Freeze for 30mins without the sticks.
Blend the remaining coconut milk with pink papitya powder and maple syrup. Fill popsicle mold to the top. Insert the popsicle stick. Bring it up and down 4 times to create the marbling effect.
Freeze for 3-4 hours or overnight
To remove popsicle gently place the bottom of the mold under running hot water for 1 minute or until popsicle releases.
Blend thoroughly to avoid lumps of coconut cream throughout.
