In this White Bean, Kale and Mushroom Bowl, I’m offering up staples to a vegan diet and the not so secret that beans are good for your health.

Ingredients

Scale
  • 1 cup of white (cannellini) bean
  • 1 tbsp of olive oil or other light oil
  • ½ small white onion diced
  • 1 clove of garlic finely chopped
  • 1 1/2 cup of chopped kale
  • 68 cremini or button mushrooms, sliced
  • 1 tbsp of fresh lemon juice

Instructions

  1. Heat oil in a non-stick skillet over medium heat.
  2. Add onion and garlic and fry for 1-2 mins.
  3. Add mushrooms, beans and kale. Fry until heated and kale is wilted (about 3-4 mins)
  4. Finish with salt and pepper to taste and fresh lemon juice.
