Vegan Creamy Tomato Sauce – no nut/dairy

No time to cook? No problem. This creamy tomato sauce will be your new favorite  sauce to make because there is no cooking involved and takes only 5 minutes to make.

Ingredients

  • ½ large or 1 small avocado
  • 1 small (410ml) can tomatoes
  • 1/3 cup nutritional yeast
  • 1/3 cup aquafaba or pasta water
  • 1 clove garlic
  • Juice of ½ a lemon or 1 tbsp lemon juice
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp pepper (or to taste)

Instructions

  1. Add ingredients to a high-speed blender and blend until rich and creamy.
  2. Pour directly into hot pasta and stir well.
  3. Alternatively you can heat sauce in a skillet with vegetables for a more complex pasta dish.
