Mandarin Quinoa Salad with Lemon Vinaigrette

Ingredients

Scale
  • 2 cups of cooked quinoa
  • 2 cups of arugula
  • ½ cup of mandarin oranges
  • 1/3 cup of pumpkin seeds
  • ¼ cup of pomegranate seeds

Lemon Vinaigrette 

  • 4 tbsp extra virgin olive oil
  • ½ tsp finely grated lemon zest (Tip: when using lemon in recipes not requiring zest.  Grate the lemon and freeze the zest until needed.) 
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp of maple syrup or agave
  • ½ tsp of Dijon mustard
  • ¼ tsp of sea salt or to taste
  • Freshly ground pepper

Instructions

  1. Place salad ingredients in a bowl
  2. In a separate small bowl whisk together vinaigrette ingredients.
  3. Pour over salad ingredients
  4. Gently toss.
