2 tbsp vegetable oil
½ cup onion, diced
1 small or 1/2 large zucchini, halved and sliced
1 large carrot, julienned or grated
½ cup corn kernels
12 green beans, trimmed and chopped
1 small red pepper, deseeded and diced
2 tbsp green onion or chives, finely sliced
Fresh cilantro and black or white sesame seeds to garnish
For the sauce:
½ cup vegetable stock
1 tsp sesame oil
2 tbsp mirin
1/3 cup soya sauce or tamari for gluten-free
2 tbsp maple syrup
1 tbsp fresh lime juice
2 cloves garlic, finely chopped
2 tbsp grated ginger
Combine the ingredients for the sauce. Mix well. Taste and adjust seasoning if necessary
Heat oil in a wok or skillet on medium/high heat. Add all the vegetables and stir-fry for 2-3 minutes. Toss well so they cook evenly.
Add the sauce and noodles to the pan. Stir until everything is incorporated.
Top with green onion and sesame seeds and cilantro.
