It’s a savory vegetable noodle dish tossed in a tangy stir- fry sauce topped with green onions and sesame seeds. A delicious main dish or side dish that is quick and easy and low-cost to make! A dish the whole family will love!

Ingredients

  • 400gs or 2 servings worth of vegan chow mien or brown rice ramen noodles
  • 2 tbsp vegetable oil

  • ½ cup onion, diced 

  • 1 small or 1/2 large zucchini, halved and sliced

  • 1 large carrot, julienned or grated

  • ½ cup corn kernels

  • 12 green beans, trimmed and chopped

  • 1 small red pepper, deseeded and diced

  • 2 tbsp green onion or chives, finely sliced

  • Fresh cilantro and black or white sesame seeds to garnish

For the sauce:

  • ½ cup vegetable stock

  • 1 tsp sesame oil

  • 2 tbsp mirin

  • 1/3 cup soya sauce or tamari for gluten-free

  • 2 tbsp maple syrup

  • 1 tbsp fresh lime juice

  • 2 cloves garlic, finely chopped

  • 2 tbsp grated ginger

Instructions

  1. Combine the ingredients for the sauce. Mix well.  Taste and adjust seasoning if necessary

  2. Heat oil in a wok or skillet on medium/high heat.  Add all the vegetables and stir-fry for 2-3 minutes. Toss well so they cook evenly.

  3. Add the sauce and noodles to the pan. Stir until everything is incorporated.

  4. Top with green onion and sesame seeds and cilantro.
