Beans for breakfast? This Copycat Golden Graham Cereal has all the sweet, satisfying goodness of the store-bought brand. This recipe is vegan, gluten-free, made without preservatives and has a secret ingredient-chickpeas! Serve with Hope & Sesame sesame milk for a nutritious, delicious, sustainable breakfast.

Ingredients

Scale
  • 1 cup oat flour
  • 1 cup chickpea (garbonzo flour)
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/3 cup vegan butter
  • 2 tbsp molassas
  • 3 tbsp agave or maple syrup
  • 12 tbsp sesame milk (I use Hope & Sesame) can substitute plant milk

Instructions

  1. Preheat oven to 350F. Ensure oven rack is in the centre position.
  2. Sift oat flour, chickpea flour, baking powder into a medium sized bowl. Sifting is important as it catches any hard bits of oat and makes the cereal less dense. Add cinnamon and salt Mix together.
  3. In a second small bowl, add melted vegan butter (use microwave or stovetop), molasses, agave or maple syrup, sesame milk and vanilla. Mix well.
  4. Add wet ingredients to the dry. Stir or until a dough forms adding more sesame milk if the dough is too dry.
  5. Divide the dough into half to make handling easier.
  6. Place half the dough between two sheets of parchment paper. Use a rolling pin to roll out the dough iabout 1/8 inch thin. Remove top layer of parchment.
  7. Use a sharp knife or pizza cutter to cut out a rectangle sheet. Remove extra dough and save for later.
  8. Next, cut vertical and horizontal lines into the sheet to create 1.5~1.8cm (0.6~0.7 inch) squares.
  9. Drag a fork down the centre of each square to create groves in the cereal.
  10. Leave on the parchment paper and place on baking tray.
  11. Place into the preheated oven and cook for only 5 minutes. Be careful this cereal burns quickly!
  12. Allow cereal  to cool down completely. Break it out into small squares with your hands.
  13. Enjoy with Hope & Sesame sesame milk!
