Black Bean Brownie Donuts

If you love brownies, donuts and healthy eating, these Black Bean Brownie Donuts are for you! Vegan, gluten-free, nut-free, no refined sugars, high in protein and loaded with Omega-3’s.

Ingredients

For the brownie donuts:

  • 1 415ml or 1 1/2 cup black beans.
  • 2 flax eggs (2 1/2 tbsp ground flax + 6 tbsp water)
  • 3 tbsp coconut oil, melted
  • 2 tbsp hemp seed
  • 3/4 cup of cocoa or cacao powder
  • 1 tsp pure vanilla extract
  • 1/2 heaping cup coconut sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt

For the icing (optional)

  • 2 cup icing sugar
  • 2 tbsp cocoa or cacao powder
  • 12 tbsp plant milk
  • sprinkles

Instructions

  1. Preheat oven to 350F
  2. Combine ingredients for the flax egg in food processor and pulse a few times until combined. Let sit for 5 mins until gel starts to from.
  3. Meanwhile lightly grease donut moulds. If they are flimsy place on a baking tray.
  4. Combine all remaining ingredients in food processor. Blend for 3-4 mins or until smooth and creamy scraping down the sides as needed.
  5. Use a spoon or pour into donut mould. Bake for 40-45mins or until tops are dry. The insides will remain soft and gooey.
  6. Allow to cool completely before handling as they will be tender and delicate.
  7. Enjoy plain or mix together ingredients for icing in a bowl. Dip the face of the donut into the icing. Decorate with sprinkles (optional).
